Our foie gras comes from a small family run farm in Perigord who have been making it since 1920. It is made from duck livers which are traditionally not considered as good as goose but this has won the Prix d'Or in Paris and is much lighter and fresher than anything in a tin. I know it is ethically and hygienically made - any stress releases adrenalin which would spoil it. I also know that it is the most delicious thing ever tasted and it is not easy to find good foie gras.. this is one. It freezes well too!
